Cut the onion into small pieces, heat the fat in a pot and fry the onion until golden.
Cut the meat into pieces and, once the onion is sautéed, add the meat as well.
When the meat turns white, season it with sweet paprika, ground caraway, black pepper and salt it.
Mix thoroughly and let the meat sauté for about 10 more minutes, until it releases its juices.
Then add mustard and bay leaves to the meat and pour the broth over it.
Then add chopped tomatoes and pepper to the pot, and one potato cut into cubes (keep the second potato for thickening).
When the goulash starts to boil, pour in the peeled tomatoes and cook for at least 40 minutes so the flavors combine well.
Finally, add the grated potato for thickening and you can serve.
